INGREDIENTS:

2 kilos of pork fillet
2 tablespoons of oil

1 cup almonds and pumpkin seeds
2 cloves of garlic
1 cup onion, quartered
1/4 cups chile de arbol, powdered
1 cup plum, pitted
2 1/2 cups chicken broth

1 cup cranberries with glazed almonds, 99 g
enough cambray potato, with rosemary, to accompany

Preparation:

Heat olive oil in a frying pan over high heat and cook the steak for 10 minutes or until golden brown on the outside. Remove from the pan and set aside.

Add oil to the same pan, then add the Fresh Gourmet almonds and pumpkin seeds, garlic, onion, chile de arbol, plum and consommé. Cook over medium-low heat for 10 minutes and remove from heat.

Blend the almonds with the garlic, onion, chili, plum and chicken broth for 5 minutes, season with salt and pepper. Mix until you have a smooth sauce.

Place the fillet in an oven-safe dish and pour the blended sauce on top. Bake at 180°C for 40 minutes, covered with aluminum.
