Chipotle rigatoni with almonds

INGREDIENTS

enough water to cook the pasta
enough salt to cook the pasta
1 package Luigi’s Rigatoni
1 cup sour cream
1/2 cups chipotle chili
1 clove garlic
1/4 cups onion
1/2 cups chicken broth
to taste of salt
to taste of pepper
1 tablespoon butter, to cook the sauce
1/2 cups almonds, sliced
1 cup chihuahua cheese, grated
1/4 cups cheese, grated, to decorate
1/4 cups almonds, toasted, to decorate

Preparation:

Bring the water to a boil in a pot and add the salt and Luigi’s Rigatoni. Cook for 9 minutes or according to package directions, until al dente. Drain and reserve.

Blend the cream, chipotle chili, onion, garlic, chicken broth, salt and pepper at maximum speed for 3 minutes.

Melt the butter in a pan, pour the chipotle chili sauce and almonds, Chihuahua cheese and cook for 5 minutes. Add Luigi’s Rigatoni, mix and cook for 3 more minutes.

Serve the chipotle pasta and decorate with cheese and almonds.
