Lemon, Paprika and Chile Marinated Wings

INGREDIENTS:

1 kilo of chicken wing
1/2 cups lemon juice
3 tablespoons of paprika
2 tablespoons chili powder
2 tablespoons of macha sauce
1 pinch of salt
1 pinch pepper, with lemon
3 tablespoons vegetable oil
4 guajillo chiles, clean, deveined and soaked in hot water
3 morita chiles, clean, deveined and soaked in hot water
1/4 cups chipotle chile in adobo sauce
4 garlic cloves, roasted
2 tablespoons of allspices
1 tablespoon cumin
1/2 onions, roasted
1/4 cups lemon juice
1/2 cups butter, melted
1 tablespoon of salt
enough blue cheese dressing, to serve
enough celery, in sticks to serve
enough carrot, in batons, to serve

Preparation:

In a bowl, mix the wings with the lemon juice, paprika, chili powder, macha sauce, season with salt and lemon pepper, marinate for 30 minutes in the fridge.

Heat a frying pan over high heat with the oil, fry the wings until they are golden brown. Remove from the pan and reserve.

For the marinade, blend the chilies with the peeled garlic, allspice, cumin, onion, lemon juice and butter until you get a smooth sauce.

In the same pan, cook the marinade until it reduces slightly, add the wings and cover with the sauce, cook for a few minutes.

Remove and serve with blue cheese dressing and vegetable sticks.
