Prepare Delicious Crispy Wings With Flour, Oil and Milk

  • 1 kilo of chicken wings
  • 1 cup cornstarch
  • 1/4 cups potato starch, for the dough
  • 1/4 cups flour, for the dough
  • 1/2 teaspoons baking powder, for the dough
  • 1 tablespoon onion powder, for the dough
  • 1 egg, for the dough
  • 1/2 cups cow’s milk, for the dough
  • salt, for the dough
  • pepper, for the dough
  • vegetable oil, for the dough
  • 3 tablespoons jalapeño pepper, pickled red, for hot sauce
  • 2 arbol peppers, for hot sauce, cleaned and soaked
  • 2 guajillo chilies, for hot sauce, cleaned and soaked
  • 2 cloves of garlic, for the spicy sauce
  • 1/4 cups vinegar, for the hot sauce


  1. Coat chicken wings with cornstarch. Reserve
  2. For the dough, in a bowl mix the potato starch, the flour, the baking powder, the onion powder, the egg, the milk, season with salt and pepper.
  3. Heat the oil to 170°C, (392°F) fry the wings for 3 minutes to brown the skin. Remove and cover with dough mixture.
  4. Fry again for 7 minutes to finish cooking the chicken.
  5. Drain and remove excess fat with a kitchen towel.
  6. For the sauce. Mix the red jalapeño pepper with the tree pepper, the guajillo pepper, the garlic and the vinegar.
  7. Top the wings with this sauce and serve immediately.
