Garlic, beef and onion. Serve on an extended plate along with white rice.
Old clothes are a very popular dish in Cuba, which is made from shredded meat and is seasoned with tomato.
Ingredients
500 grams of beef, skirt
enough of water, to cook the meat
1/4 onions, to cook the meat
1/2 heads of garlic, halved, to cook the meat
1/4 cups olive oil
1 1/2 cups onion, thinly sliced
3 garlic cloves, finely minced
1/2 teaspoon ground cumin
1/4 teaspoon black pepper, ground
1/4 cups dry white wine
1/2 cups of tomato puree
enough of salt
1 cup green bell pepper, thinly sliced
2 plantains
enough of vegetable oil
Preparation
Place the meat, onion and head of garlic in a pot, cover with water and cook for 40 minutes, taking care not to run out of water.
Remove from the heat, reserve the water and the meat, let it cool. Crumble the meat and reserve.
Add the oil in a pan and fry the onion, garlic and cook for 2 minutes.
Add 1 cup of the broth from the cooking of the meat, the cumin, the pepper and mix.
Add the meat, wine, tomato puree and cook for 10 minutes over medium heat.
When the liquid evaporates, cover and cook for 5 more minutes.
Season with salt and add the green pepper. Remove from heat and reserve.
Heat enough vegetable oil and fry the banana pieces for 5 minutes until soft, remove them and reserve the oil for later use.
Meanwhile, crush the banana pieces into a toast shape (circular), fry the banana toast again for 2 minutes until crisp, remove excess fat and reserve.
Serve on an extended plate with white rice and tostones.
