Cilantro, Epazote and cumin. Accompany with tortillas.
The slices with cheese are a delicious combination and are perfect covered with a green sauce, besides being easy to prepare.
Ingredients
- enough extra virgin olive oil
- 1/8 onions
- 1 clove garlic
- 6 green tomatoes, cut into quarters, for the sauce
- 1 serrano chile
- 1/4 tablespoons coriander seed
- 1/2 teaspoons cumin
- 1/2 cups of vegetable broth
- enough of salt
- enough extra virgin olive oil
- 1 cup onion, filleted
- 3 cups of rajas poblanos
- 1 sprig of epazote
- enough of salt
- 1 1/2 cups manchego cheese, cubed
- enough coriander, small leaves
- enough tortilla, to accompany
Preparation
For the sauce: heat a frying pan over medium heat, add extra virgin olive oil, the onion and the garlic clove and fry for a few minutes.
Add the green tomato, serrano pepper and fry for 5 more minutes. Cook until you finish integrating the flavors.
Blend the sauce with the vegetable broth, add the coriander seeds and the cumin. Return the sauce to the pan and fry for a few more minutes. Hot reserve.
For the rajas: heat a skillet over medium heat, add extra virgin olive oil, the onion and the rajas and fry for 5 minutes until the ingredients soften.
Serve the rajas with the cheese cubes and pour the warm sauce over them so that the cheese melts slightly and add a little extra virgin olive oil.
