Insert a wooden toothpick into the bacon slices, trying to go all the way through the slice.

Place the bacon strips on a tray and, with the help of a brush, cover with the jam.

Bake bacon at 350°F for 15 to 20 minutes or until golden brown and caramelized.

Let cool and reserve.

For the pancake batter: Mix the strawberry jam with the pancake flour in a bowl, the baking powder, the egg, the melted butter and the milk. Beat until lumps dissolve

Coat the bacon strips with pancake flour to remove excess fat. Then completely cover the bacon strips with the hot cake mixture.

Heat the oil in a deep frying pan and fry the bacon banderillas for 8 minutes, then place them on absorbent paper to remove excess oil.

Serve the bacon banderillas with hot cake flour and accompany with jam.
