Spanish chorizo, garlic and egg. Accompany with garlic mayonnaise
You cannot miss these paella croquettes, as they have all the flavor of the Spanish classic in a single bite. In addition, this croquette recipe is prepared with Yellow Rice
Ingredients:
- 1 package of yellow rice
- 2 cups of water
- Olive oil
- 1/2 cups onion, finely chopped
- 1 clove garlic, finely minced
- 1 cup of pink shrimp
- 1 cup Spanish chorizo, finely chopped
- 1/2 cup peas, cooked
- 1/2 cups bell pepper, roasted, in strips
- 3 tablespoons parsley, chopped
- 1/4 cups Parmesan cheese, grated
- 1/2 cups of rice flour
- 3 eggs
- 2 cups of breadcrumbs
- vegetable oil, to fry the croquettes
- parsley, finely chopped, to decorate
- Alioli, To accompany
Preparation:
In a pot, bring 2 cups of water to a boil.
Add the yellow rice and stir well.
Bring to a boil for 1 minute, cover and allow liquid to reduce to low heat.
Continue cooking for 25 minutes or until the water evaporates completely.
Stir with the help of a fork, remove from heat and let cool in a container.
Heat the olive oil in a pan over medium heat, add the onion, the garlic and fry for 2 minutes, until the onion is transparent.
Then add the shrimp, the Spanish chorizo and fry for 5 more minutes, add the peas, peppers and cook 1 more minute.
Pour the sauce into the bowl with Yellow Rice, add the parsley, the cheese and integrate the ingredients, season with salt and pepper if necessary; add the Rice Flour to remove excess moisture and mix.
Form the croquettes with your hands, place them on a tray with waxed paper and freeze for 10 minutes.
Pass the croquettes through the egg and then through the ground bread; repeat the process 1 more time, to form a double layer of breading for each croquette.
Fry in hot oil for about 2 minutes, or until golden brown. Remove excess oil with absorbent paper.
Serve them on a plate, sprinkle with parsley and accompany with aioli.
