Try this rich and healthy salad, with a crispy breaded amaranth and a delicious slightly spicy tropical mango dressing, accompanied by cherry tomatoes.

  • 2 eggs
  • salt and pepper
  • 1 cup amaranth
  • 1 cup of wheat bran
  • 2 chicken cutlets
  • 1 cup of flour
  • 1 pure soybean edible oil
  • 1/4 cups extra virgin olive oil, for the dressing
  • 2 tablespoons white vinegar, for the dressing
  • 1 cup mango, for the dressing
  • 1/2 tablespoon chili seeds, for the dressing
  • 1 tablespoon honey, for the dressing
  • salt and pepper, for the dressing
  • 2 cups of romaine lettuce, washed and disinfected
  • 1/4 cups cherry tomato, cut in half
  • 1/4 cups cherry tomato, yellow, cut in half

Beat the eggs with salt and pepper.
Mix the amaranth with the wheat bran.
Chicken slices with egg, flour and amaranth mixture.
Heat a skillet over medium heat and heat the oil. Fry the milanese until they are cooked and crispy. Drain on absorbent paper.
Cut the milanesas into strips of medium thickness and reserve.
