Parsley, cherry tomato and walnuts. Accompany with slices of Parmesan
We prepare this homemade pesto based on walnuts and Parmesan cheese.
Ingredients:
- water, for the dough
- salt, for the dough
- 1 package of spaghetti, 450 grams
- 1 1/2 cups basil, for the pesto
- 1/4 cups parsley, for the pesto
- 1/2 cup walnuts, for the pesto
- 3 cloves of garlic, for the pesto
- 1/3 cups Parmesan cheese, grated, for the pesto
- salt, for the pesto
- 3/4 cups olive oil, for the pesto
- butter, for the shrimp
- 2 cups of large shrimp
- 1 cup cherry tomato, in half, to accompany
- Parmesan cheese, in slabs, to accompany
Preparation:
Heat enough water in a pot until it boils, then add the salt and wait for it to boil again.
Add the Spaghetti, cook for about 8 minutes, remove from heat and drain the pasta.

For the pesto: Add the basil, parsley, walnuts, garlic cloves, Parmesan cheese, olive oil, and salt to a processor.
Grind in small steps of 5 seconds until an integrated preparation is obtained.

Heat a skillet over medium heat, add the butter and shrimp.
Cook until golden, then remove from heat and set aside.
Add some pesto to the same pan, wait for it to heat up and add the cooked spaghetti and the rest of the pesto.
Cook for 2 minutes, add shrimp and cherry tomatoes and serve instantly.
Accompany the pesto spaghetti with shrimp with Parmesan cheese flakes.
